Easy Graham Cracker Ice Cream Sandwiches

This easy to make, 4 ingredient frozen graham cracker ice cream sandwich recipe uses whip cream, instant pudding, and sprinkles as the delicious “ice cream” filling. It’s so simple to make and a guilt free low calorie dessert!

I enjoy making these every summer! It’s such an easy, delicious treat! The best part of this recipe is there is no need to turn on the oven, no need to heat your house up to have something sweet. These require little to no effort and are no bake!! Even better, they are totally customizable and the kids can help make them!!

Are they low calorie?

These are absolutely low calorie! The ingredients I use make each sandwich 110 calories. You can make them even lower calorie by using the light whip cream and sugar free instant vanilla pudding. I prefer the normal whip cream and happy with them being 110 calories. I can enjoy this yummy frozen dessert guilt free!

Can you change the ingredients?

The best thing about this recipe is you can make it according to my recipe or make it your own!! Try it with chocolate graham crackers, chocolate chips in place of the sprinkles or maybe no sprinkles at all!! No matter what you decide it is sure to be delicious and something you will make every summer!!

The ingredients you need.

One of the best things about this recipe is it only requires 4 ingredients. You know what else makes this recipe great? It is absolutely budget friendly, you won’t break the bank to make this dessert. I use all store brand, so my good ole go to, “Great Value”. I used Great Value graham crackers, whipped topping, instant vanilla pudding and sprinkles. Those items total $6.25. How can you beat that?! You will have left over graham crackers and sprinkles to make another batch. The next batch will be even cheaper!! Can I get a fist bump??

Let’s make it!

This recipe is EASY!! You can let the kiddos help with this one, it’s that easy. You want to grab a large bowl and combine the thawed whipped topping and dry instant vanilla pudding mix. The mixture should be smooth, so mix until it is no longer grainy. It does take a few minutes to get that perfect smooth texture.

Grab a small cookie sheet or any cookie sheet for that matter. I use a smaller one so that it will fit in my freezer. Open a sleeve of graham crackers and carefully break in half. That can be tough and not all will break perfectly. Those are usually the ones I snack on while I make them. Place 12 halves on the cookie sheet, try to leave some room in between each cracker so that they don’t freeze together.

Spread approximately 2 tablespoons of pudding mixture on top of each graham cracker. Top each graham cracker with the other halves.

It’s ok if the pudding mixture oozes, you want that! That is what helps the sprinkles to stick to the sides. Pour sprinkles on a plate and take each graham cracker sandwich and dip all four sides in the sprinkles.

Place the cookie sheet with the graham cracker sandwiches in the freezer and freeze for at least an hour.

Once frozen, wrap each sandwich in saran wrap and place in an airtight container or gallon Ziploc bag and store in the freezer.

The next time you are craving something cold and sweet, open the freezer, pull out your graham cracker ice cream sandwiches and eat one. I know you will love them like we do!

Guilt free easy Ice Cream sandwiches, only 4 ingredients!

Ingredients

  • 8 ounce tub whipped cream, thawed

  • 3.4 ounce instant vanilla pudding

  • 24 graham cracker squares

  • sprinkles

Directions

  • In a bowl combine whip cream and dry vanilla pudding.
  • Stir until pudding is completely combined with whipped cream. Combine until smooth and not grainy.
  • Line out 12 half graham cracker squares on a small cookie sheet.
  • Spread about approx. 2 tablespoons of whip cream mixture on each graham cracker square. (doesn't have to be perfect)
  • Place the other 12 graham cracker halves on top of each cracker that you spread with whip cream mixture.
  • It's ok if the mixture oozes out the sides, that's what you want. It will help the sprinkles to stick.
  • Pour sprinkles on a plate and take each graham cracker sandwich and dip all four sides in the sprinkles.
  • Place the cookie sheet with the graham cracker sandwiches in the freezer and freeze for at least an hour.
  • Once frozen, wrap each sandwich in saran wrap and place in an airtight container or gallon Ziploc bag and store in freezer.
