Easy Sweet and Sour Chicken

I stumbled upon a pretty great recipe. One that takes little effort, yet tastes like you spent hours preparing and cooking! Are you ready?

I have always enjoyed sweet and sour chicken. It was always a lot of work, I found myself putting it off and never making it. I bought a bottle of La Choy sweet and sour sauce, chicken and all the ingredients I needed to make it, and there the ingredients sat. Until one day I came up with a genius idea! Light bulb moment! Since then my husband has actually requested it again! Did I mention how easy it is to make??

The ingredients you need:

La Choy sweet and sour sauce. You can absolutely make your own sweet and sour sauce, but if you want to make it the way I did, you will need a bottle of La Choy brand sweet and sour sauce. It is our favorite and my go to. Feel free to try other brands or like I said make your own. Buying it already made just makes it that much easier to prepare this dish.

Tyson Anytizer popcorn chicken. When making sweet and sour chicken from scratch you need to chunk raw chicken and add corn starch or some type of breading before you cook it. My light bulb moment was when it dawned on me that popcorn chicken is that. Chicken already cooked and breaded!! Genius! I have bought frozen orange chicken from Costco quite often and that is all it really is. Breaded chicken that you bake, heat the sauce, combine it all together and voila, you have easy orange chicken. This is the same concept. The popcorn chicken that I like to use is the Tyson Anytizer brand. Just like with the sweet and sour sauce you can use it brand that you like.

Veggies. You need one red bell pepper, one green bell pepper and about a 1/4 of a large white onion. I cut them into big chunks.

Chunked Pineapple. I just buy the Great Value brand, works for me. Feel free to use the brand you like or fresh. Again, I used the canned, keeping with easy and quick.

Vegetable oil. You don’t need much and can use any oil that you prefer.

Time to prepare:

Since we are using frozen popcorn chicken, we will need to preheat the oven to 400°. I like to line my baking sheet with foil, makes clean up a breeze. Add the chicken and bake for 20 minutes.

While the chicken is cooking, chunk up the peppers and onion. Add them to a preheated pan with oil. Sauté until tender, usually takes about 5 minutes.

Drain the oil from the pan and add in the sweet and sour sauce and drained pineapple and mix together well.

Add the chicken, mixing well. Be sure to mix until all the chicken is coated with the sweet and sour sauce. Simmer together for about 3 minutes.

Now is the best step! The most important step, ENJOY!! Serve this dish with your favorite side. I like to serve it with white rice or with my homemade Panda Express (Copycat) Chow Mein.

Conclusion:

This dish is perfect for a busy night, it’s super easy to prepare and can be completed in 30 minutes. If you are having company over and want to impress, then this dish is the one to try. I guarantee they will be asking you for your recipe! If you happen to have left overs, store them in an air tight container in the fridge. This is literally the easiest Sweet and Sour Chicken you'll ever make and is sure to impress anyone!!

Ingredients

  • 14.8 oz bottle La Choy Sweet and Sour sauce

  • 1.5 lb bag Tyson Anytizers Popcorn Chicken

  • 1 Red Bell Pepper, chunked

  • 1 Green Bell Pepper, chunked

  • 1/4 White Onion, chunked

  • 20 oz can Chunked Pineapple, drained

  • 2 Tbs Vegetable oil (use any type of oil you prefer)

Directions

  • Preheat oven to 400°. Wrap a cookie sheet with foil (for easy cleaning) and add chicken. Cook chicken in preheated oven for 20 minutes.
  • While chicken is cooking in oven, sauté chunked peppers and onion in oil until tender, usually 5 minutes.
  • Drain oil. Add sweet and sour sauce and drained pineapple and mix together.
  • Add chicken and simmer for 3 minutes to heat sauce.
  • Enjoy! Serve with rice, Chow Mein or your favorite side dish!
  • Store any left overs in an air tight container in the fridge, stored right will last for up to 5 days.
