Don’t you just love meals that you can throw all the ingredients in one pot? How about meals that are budget friendly and don’t break the bank to prepare? That is definitely me. I love easy meals that don’t cost a fortune to make and better yet it is delicious! This one pot hamburger skillet is absolutely tasty and one the whole family will love!

Another plus to this recipe is that it is a great one to make when you are low on food and in need of a trip to the grocery store. These ingredients are usually already in the fridge and pantry. I like to save this meal for right before I head to the store. This is a quick and easy meal that would be great for a busy weeknight, is also a great meal for camping!

You’re going to need ground beef and honestly the greasy stuff works great in this recipe. I like to buy ground beef when it goes on sale. I buy 5 pounds or more depending on the sale. I divide it up into 1 1/2 pounds each and freeze. A pound and half works for my family, especially if it is the 70/30 or 80/20 burger. It tends to shrink up as it cooks.
Potatoes are going to be your next ingredient. I just bought a 5 pound bag for .67. I was happy about that price! Thanksgiving is only a few days away as I am writing this post so potatoes are pretty popular right now, and to be honest I bought 2 bags at that price! I use 6 medium to large potatoes for this recipe.
You are also going to need an onion, minced garlic, garlic salt and pepper. And for the topping, cheese! I just made this and am craving it again! This is so so good!
How to make it.
You are going to start by adding your ground beef and minced garlic to your pan, while it is browning go ahead and peel and thinly slice the potatoes. Do the same to the onion. Thin slices work best.

Depending on how greasy your burger is, you shouldn’t need to drain the grease. In this recipe, grease is your friend. It will help to properly cook the potatoes and onions. As I was making this recipe for this post I ended up with more grease than I needed and drained a little bit of it. So you can use your judgement here.

When the burger is browned, add in the sliced potatoes and onion. Sprinkle with pepper and garlic salt and stir to combine all the ingredients. Stir and Cover with lid, keep heat at medium low.

Allow to cook for 15 minutes. Remove the lid and stir bringing ingredients from the bottom of the skillet to the top. Replace the lid and cook for another 15 minutes. This is usually how long it takes for me but you can check and repeat once more if necessary.

When the potatoes are “fork tender”, turn off heat. Cover meat and potatoes with grated cheese and replace the lid for an additional 5 minutes or until cheese is melted. Top it off with chives if you’d like! Now as always the best part, Enjoy!!

Ingredients
1 pound ground beef (I use 1 1/2 lbs. for my family)
1/2 large onion, thinly sliced
6 medium/ large potatoes, thinly sliced
1 tsp. minced garlic
Garlic salt and black pepper
1 1/2 cups grated cheese
Directions
- In a large skillet, with a lid, over medium heat, brown ground beef with 1 tsp. minced garlic.
- Add sliced potatoes and onions. Sprinkle with Garlic Salt and Black Pepper to taste.
- Stir and Cover with lid, cook at medium low.
- Allow to cook for 15 minutes. Remove lid, stir bringing ingredients from bottom of the skillet to the top.
- Replace lid. Cook for another 15 minutes. Check and repeat once more if necessary.
- When the potatoes are "fork tender", turn off heat. Cover meat and potatoes with grated cheese. Replace the lid for an additional 5 minutes or until cheese is melted.
